Black Friday

I decided to experience Black Friday this year since it's been a while since I've done it. I went with my Mom and Auntie Teody/Uncle Kong's family. We left around 430 in the morning. I woke up around 3 though because Trevor started crying. He usually sleeps pretty good during the night but I think it's because he's not used to his surroundings right now. But I'm used to waking up early now, so it wasn't bad. Anyways, we ended up going to the Navy Exchange, three different Targets because my Mom was looking for something that was gone in 5 mins, and we also went to Kohls. There were some good deals and I'm happy with the stuff I got. Here are a couple of pics I took at the Navy Exchange:

Happy Thanksgiving!

Thanksgiving was a great day! It was nice to come up to Seattle this year since the last couple of years we were not able to come because of work. It was nice to spend time with family and eat lots of food! Here are some pics: Poor Tyler is sick. Here he is drinking Pedialyte.

Veteran's Day Weekend

Well, I actually quit my job after 6 months of leave which included pregnancy leave, bonding leave, and my sabbatical. My last day was Saturday after giving my notice on Thursday. It's kind of weird that I don't have to go back to work. I was considering going back to work but with our weird schedules and childcare being so expensive, we felt it would be better for us and Trevor if I didn't. It's good that I get to spend all the time with Trevor =). Our budget is tight but I'm sure we'll be fine.

Also, this weekend we had a full house. Sharon and Tim came Friday night, and then Mom and Dad and KaJon and Amabelle came on Saturday. It was fun having everyone over and great that they came! Trevor was a bit overwhelmed and cried when they first got here. It was kind of funny especially when his cousin Tyler responded to Trevor's crying by talking out, like he was mocking him.

Enchiladas!!!

Today, I decided to make enchiladas. I was busy taking care of Trevor, so Nathan made them. They were yummy! We used the enchilada sauce by Old El Paso.
There is a recipe on the back of the can that we kinda followed. Instead of beef, we made shredded chicken. Here are pics of the finished product.

Trevor's 6th month appointment

Trevor had his 6th month appointment today. He wasn't very happy about it especially when he was getting his shots. He got four shots including his flu shot and one that he drank. I think he was even more cranky because he was tired. When we started driving in the car, he went right to sleep. But he is in the 50th percentile in weight, height, and head length. He weighs 17 lbs 13 oz. and is 26.5" tall.

Pot Roast

Nathan saw Paula Deen on the Food Network making Pot Roast the other day and it looked good, so he decided to make it. We had it for dinner today and it turned out really good. It was so tender and moist. Nathan added celery and carrots, which was a great addition.

Here's Paula Deen's recipe:

  • Serves:
    8 servings
    1 (3 to 4-pound) boneless chuck roast
    1 teaspoon House Seasoning, recipe follows
    1 teaspoon salt
    1/2 teaspoon black pepper
    2 tablespoons vegetable oil
    1 cup thinly sliced onion wedges
    3 cloves garlic, crushed
    2 bay leaves
    1 (10 3/4-ounce) can cream of mushroom soup
    1/4 cup red wine
    2 tablespoons Worcestershire sauce
    1 tablespoon beef bouillon granules
    3/4 cup water

    Preheat oven to 350 degrees F.

    Add the House Seasoning, salt and pepper to a small bowl. Rub seasoning into the roast on both sides. Heat oil in a large skillet and brown the roast, searing it on both sides. Place the meat in a roaster pan. Add onions and garlic to skillet for 1 to 2 minutes to absorb leftover roast juice. Place into roaster pan with meat and bay leaves.

    Combine the mushroom soup, wine, Worcestershire sauce and beef bouillon into a bowl. Pour over the roast. Add water.

    Cover pan with foil and bake for 3 to 3 1/2 hours or until tender.

    Remove and discard the bay leaves.

    *Cook's Note: If the gravy is not thick enough, remove the meat from the pan and pour the gravy into a saucepan. Bring to a boil and thicken it by adding 2 tablespoons of cornstarch mixed with 1/4 cup cold water, stirring constantly.

    House Seasoning:
    1 cup salt
    1/4 cup black pepper
    1/4 cup garlic powder

    Mix ingredients and store in an air tight container for up to 6 months.
