Sugar Cookies...
Here are the cookies I made yesterday:
Here are the ones I made today:Melt In Your Mouth Sugar Cookies
½ cup butter
½ cup olive oil (I used vegetable oil)
½ cup sugar
½ cup powdered sugar
1 egg
½ teaspoon vanilla
½ teaspoon cream of tartar
½ teaspoon baking soda
½ teaspoon salt
2 cups flourPreheat oven to 375ºF. Cream butter, oil and sugars. Add egg and vanilla. Sift together dry ingredients and add them slowly to the creamed mixture. Drop by rounded teaspoonfuls onto an ungreased cookie sheet. The original recipe said to flatten with the bottom of a glass dipped in sugar, but they flatten pretty well on their own, if you want to skip that step. Bake for 10 minutes.
Roxymom’s Sugar Cookies
¾ cup butter
1 cup sugar
1 egg
½ teaspoon vanilla
½ cup heavy cream
2 ¾ cups flour
½ teaspoon baking soda
¼ teaspoon saltCream butter and sugar, then add egg/cream/vanilla. Then the precombined flour/soda/salt. Form into balls and then flatten slightly before baking. Bake at 350 degrees until ligh brown, approximately 10 minutes. Cool and Frost.
If you want to roll out and cut the dough, you would need to refrigerate first.

Parmesan Chicken...
Here's the recipe:
INGREDIENTS:
4 (4 ounce) boneless, skinless chicken breast halves
1/2 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon dried basil
1 egg
1 tablespoon butter or margarine
1 tablespoon vegetable oil
Flatten chicken to 1/4-in. thickness. In a shallow bowl, combine bread crumbs, Parmesan cheese and basil. In another bowl, beat the egg. Dip chicken into egg, then coat with crumb mixture. In a large skillet, brown chicken in butter and oil over medium heat for 3-5 minutes on each side or until juices run clear.
