Sugar Cookies...

I made sugar cookies yesterday and today since I've been in the mood for the Lofthouse style sugar cookies, which are the ones you can buy in the store that are covered with thick frosting. They taste so good and are nice, soft and fluffy. They are expensive though. So I searched the web for a recipe that was similar and these are the ones I've tried so far. The ones I made yesterday were good, but the ones I made today I think are better. I like the way they fluffed up. I'm not sure which ones taste more like the Lofthouse cookies since I haven't had them in a while but both recipes made cookies that taste great.

Here are the cookies I made yesterday:

Melt In Your Mouth Sugar Cookies

½ cup butter
½ cup olive oil (I used vegetable oil)
½ cup sugar
½ cup powdered sugar
1 egg
½ teaspoon vanilla
½ teaspoon cream of tartar
½ teaspoon baking soda
½ teaspoon salt
2 cups flour

Preheat oven to 375ºF. Cream butter, oil and sugars. Add egg and vanilla. Sift together dry ingredients and add them slowly to the creamed mixture. Drop by rounded teaspoonfuls onto an ungreased cookie sheet. The original recipe said to flatten with the bottom of a glass dipped in sugar, but they flatten pretty well on their own, if you want to skip that step. Bake for 10 minutes.

Here are the ones I made today:

Roxymom’s Sugar Cookies

¾ cup butter
1 cup sugar
1 egg
½ teaspoon vanilla
½ cup heavy cream
2 ¾ cups flour
½ teaspoon baking soda
¼ teaspoon salt

Cream butter and sugar, then add egg/cream/vanilla. Then the precombined flour/soda/salt. Form into balls and then flatten slightly before baking. Bake at 350 degrees until ligh brown, approximately 10 minutes. Cool and Frost.

If you want to roll out and cut the dough, you would need to refrigerate first.
