Sleepy Sunday...

What going to Michael's can do....

During the past week I went to Michael's since I had the 50% off coupon, and while browsing I noticed the card making stuff. The next thing you know I'm buying stuff to make cards each day using the coupon =P. I actually bought a machine called the Cuttlebug that embosses and cuts stuff. It's pretty cool!
I'm just starting out and don't really know what I'm doing but here are my first cards:

Fettuccine alfredo with chicken

I decided to try out another recipe that looked good from the free Kraft magazine we got in the mail, and this fettuccine alfredo wasn't bad. It was pretty easy to make too.



Here is the recipe from Kraft:
Ingredients:
1/2 lb. fettuccine, uncooked
1 lb. boneless skinless chicken breasts, cut into strips
1-1/4 cups fat-free reduced-sodium chicken broth
4 tsp. flour
4 oz. (1/2 of 8-oz.) PHILADELPHIA Neufchatel Cheese, cubed
3 Tbsp. KRAFT Grated Parmesan Cheese, divided
1/4 tsp. garlic powder
1/4 tsp. pepper

Directions:
Cook
pasta as directed on package.

Meanwhile, heat large nonstick skillet sprayed with cooking spray on medium-high heat. Add chicken; cook 5 to 7 min. or until chicken is cooked through, stirring occasionally. Remove from skillet. Mix broth and flour in same skillet. Stir in Neufchatel cheese, 2 Tbsp. of the Parmesan cheese, the garlic powder and pepper; cook 2 min., stirring constantly with wire whisk until mixture boils and thickens. Stir in chicken.

Drain pasta; place in large serving bowl. Pour chicken mixture over pasta; toss to coat. Sprinkle with remaining 1 Tbsp. Parmesan cheese.

Special Extra-
Sprinkle with 2 Tbsp. chopped fresh parsley just before serving.
Substitute-
Prepare as directed, using whole wheat fettuccine.
Variation-
Stir in 2 cups chopped cooked broccoli before serving.

Trevor - 21 weeks old

Cookies....yumm...

I felt like baking cookies today....so I pulled out an old recipe that I used to make a lot when I was younger. It's a chocolate chip cookies recipe from my home economics class that I took in junior high school, but since I didn't have any chocolate chips, I used M&M's instead. =) They turned out just as I remember....yummy! =)
Here's the recipe, courtesy of Mrs. McCormick from Northshore Junior High:
Ingredients
1/3 cup shortening
1/3 cup margarine or butter
1/2 cup granulated sugar
1/2 cup brown sugar packed
1 egg
1 tsp vanilla
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 pkg chocolate chips (or in my case I used M&Ms)

Directions:
1. Preheat oven to 375 degrees
2. Mix thoroughly shortening, margarine, sugars, egg, and vanilla.
3. Stir in remaining ingredients. For a softer cookie, add 1/4 cup more flour.
4. Drop dough by rounded teaspoonfuls two inches apart onto an ungreased baking sheet.
5. Bake 8 to 11 minutes.

Bruschetta Chicken Bake...

I received a Kraft food and family magazine in the mail which has many different recipes in it and this one looked good so I decided to try it out. It turned out pretty good! Nathan and I both liked it. If you like Stove Top Stuffing, you'll like this recipe. It's easy to make and tastes good.

Here's the recipe from Kraft:
Ingredients:
1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried basil leaves
1 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese
Directions:
HEAT
oven to 400°F. Mix tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.
LAYER
chicken, basil, cheese and stuffing in 3-qt. or 13x9-inch baking dish.
BAKE
30 min. or until chicken is cooked through. Enjoy now or cover and refrigerate. To reheat, microwave each serving on HIGH 2 to 3 min.

Crispy Breaded Pork Cutlets

I decided to make crispy breaded pork cutlets. I found this recipe on Martha Stewart's website while looking for the recipe Sharon talked about, which I was unable to find. So I made these instead and they tasted pretty good! The recipe uses Dijon mustard, which you can taste pretty well. If you don't like the mustard, this recipe isn't for you. Here's the link to the recipe, here. I figure I'll post the recipes as well now too, since the link might not work later on. This will also be a good place to go to for recipes if I lose my hard copy. I'm sure I'll make this again. =)

Here's the recipe, which I cut and paste from the website:
Serves 4
Ingredients
  • 1 1/2 cups panko (Japanese breadcrumbs)
  • 2 tablespoons vegetable oil, such as safflower
  • 4 boneless pork loin chops (6 to 8 ounces each)
  • 3 tablespoons Dijon mustard
  • Coarse salt and freshly ground pepper
Directions
  1. Preheat oven to 425 degrees. On a rimmed baking sheet, toss panko with oil. Bake, tossing once, until golden brown, 7 to 10 minutes. Transfer to a medium bowl. Reduce oven temperature to 400 degrees.
  2. Meanwhile, one at a time, place chops between two large pieces of plastic wrap. Using a meat mallet or the bottom of a small heavy pan, pound to make 1/4-inch-thick cutlets.
  3. Dividing evenly, coat pork with mustard; season with salt and pepper. One at a time, dip cutlets into panko, pressing firmly to adhere.
  4. Place a rack on a rimmed baking sheet; place pork on rack, and bake, without turning, until opaque throughout, 10 to 15 minutes.

Panang Curry.....yummm!

Yummy, I just finished eating some Panang Curry Chicken with rice that Nathan just made. It was Nathan's idea to make it and I thought that sounded good. So this morning we looked online for the recipe and then went to the nearby asian market store and gathered the ingredients. It's a nice little asian store and the lady there was very helpful in finding the ingredients which was nice.

I'm surprised on how easy it is to make and it didn't take long for Nathan to cook. I wanted to make it but he insisted since it was his idea =P. Look how nice it turned out! It tasted really good! Nathan and I have decided that we're going to cook more often. =)

Aluminum in deodorant...

When we were at Mom's place, she told us to read an article that was in the Costco Connection magazine, called "An answer to cancer?" By Hope Katz Gibbs. It's about a man, Dr. David Servan-Schreiber, who had brain cancer and talks about how we can prevent cancer. He has a book out called Anticancer. He advises to avoid some common household products and when I read to avoid deodorants and antiperspirants with aluminum, I decided to see if the deodorant I use has it. Sure enough it does, and when I went to the store, Winco's, I noticed that all major deodorants use Aluminum. So, I ended up buying the natural deodorant that is pictured. This deodorant says it does not contain aluminum, parabens, alcohol, dyes, or artificial bactericides! It smells okay and wasn't that expensive. I'd rather be safe and use the aluminum free deodorant, even if the evidence is inconclusive. Here's a link to a Wiki on deodorant. Ate too much today....

We decided to go up to Seattle this weekend and today started off with brunch at Amabelle's and Kajon's. I had some yummy waffles with strawberries, blueberries, and syrup. Also, had scrambled eggs and a little steak too. Brunch was great! Thanks Kajon and Amabelle!

Today was also the beginning of fantasy football. My team, Trevor's Titans is doing well so far. I am currently beating Killa Whale(Ryan) with a score of 103.4 to 47.2 =). Hopefully, my players will continue to do well. It was cool when I won the fantasy league last year!

After brunch, we went to Ikea. Sharon, Tim, and Amabelle got some nice stuff. I didn't buy anything since I figured I could just get stuff in Oregon and there wouldn't be room to take stuff back home. But we had some snacks which consisted of soft serve vanilla ice cream and cinnamon rolls. Yummy! Thanks Amabelle! =).

But I'm so full now....we had dinner at Mom's. We had seafood pasta, salad, and bread rolls. I ate so much seafood pasta, it was so good! Then for dessert I had vanilla cake, the one from Trader Joe's and it was yummy of course!
